Cauliflower Mash with Lemon Asparagus and Shiitake Mushrooms

Cauliflower Mash
Ingredients
- One head of cauliflower
- 4 tablespoons of milk
- 1 tablespoon of butter
- 2 tablespoons of sour cream
Instructions
- Take one head of cauliflower and cook at a medium heat with the lid on for about 15 minutes.
- Drain all the water once fully cooked
- Add in milk, butter, sour cream, and salt and pepper to taste
- mash until it has mashed potato consistency
Oven Roasted Lemon Asparagus
Ingredients
- A package of asparagus
- 1/2 teaspoon olive oil
- salt
- pepper
- one lemon
Instructions
- Place asparagus in a oven safe pan
- Drizzle olive oil on top of asparagus
- Season with salt and pepper to taste
- Oven roast for 10-15 minutes (depending on how dry you like them)
- Let cool for 5 minutes and squeeze lemon juice on top
Shiitake Mushrooms
Ingredients
- 5 ounces of large shiitake mushrooms, chopped
- 3 tablespoons of unsalted butter
- 1 clove of minced garlic
- 1/2 tablespoon chopped parsley
- salt and pepper
Instructions
- Combine butter and garlic in pan and heat for about 30 seconds
- Add in the chopped mushrooms and sauté for about 4 minutes
- Add parsley, salt and pepper to taste
