Light and Simple Summer Ceviche
Sometimes in the summer, it can be too hot to even think about food. Everything sounds too heavy, greasy, or too time consuming to make. The best summertime foods are ones that don’t require a stove or oven because no one wants to heat up the house. Ceviche is a very light and refreshing meal that can be thrown together in no time. What’s also great about it is that it is so customizable. As long as you keep in the citrus element, you can leave out or add in whatever you desire.Usually the shrimp is used raw, but if you don’t want to eat raw shrimp you can boil it or use cocktail shrimp. There are many different recipes out there but this is The Fit Girl’s favorite shrimp ceviche.
What You’ll Need
1 pound Shrimp chopped
7 limes
1 large and finely diced cucumber
2 jalapeños finely chopped
1 large tomato
1/2 cup chopped onion
1 avocado
2 tablespoons chopped cilantro
1 tablespoon olive oil
Salt to taste
How to Prepare
Combine chopped shrimp with all other ingredients in a large bowl and mix thoroughly.
Let sit in the refrigerator for 4 hours for the shrimp to soak in the flavor.
Serve with tortilla chips or on their own for a delicious summer meal!
